Bagna cauda, or “hot sauce” in Piedmontese dialect, is a traditional classic in the hilly areas of Langhe, Roero and Monferrato. Salted anchovies, garlic, and extra virgin olive oil are the essential ingredients of this convivial sauce.

It is recommended to be eaten hot with a rich variety of raw or boiled vegetables, or on meat carpaccio.
